I have received messages asking me questions about the foods I like to eat and how I manage to take care of my body because of the industry I work in. My answer to these questions goes so much deeper than appearance, size, weight, calories, etc. Those aspects mean very little to nothing when it comes to feeding my physical body what it needs to thrive in perfect harmony with my spirit. I will explore and elaborate more about this on a future post. From my experience, food and nutrition play one of the major roles in keeping our spirits in tune and balance with our physical bodies.
For today's post, I want to share a quick and easy recipe...
I love avocados and seem to be eating them with everything these days. I also love hummus dip and have recently converted to the Hope Foods brand. They have an amazing variety of flavors to choose from and they all taste fantastic! I came up with this new recipe using their 'Spicy Avocado' flavor and it is seriously so good!... Like... You'll lick the bowl til it’s gone’ good... At least I did.☺ Not all the ingredients are in this picture but below you will find a list of everything you need. It's fast, easy and very flavorful. Ingredients:
- 1 container of mixed greens
- 1 container of Hope Foods Spicy Avocado Hummus Dip
- 2 cups of freshly cooked quinoa ( I use a bag of 'KEEN ONE Quinoa Garden Medley')
- 1 ripe avocado sliced
- 1/4-1/2 cup of trail mix including pumpkin seeds, sunflower seeds, almonds, dried cranberries and dried blueberries
Cook quinoa on stovetop. In a large bowl, add mixed greens, avocado, trail mix and hummus. Add hot quinoa on top and mix thoroughly. (Make sure the quinoa is hot because it helps melt down hummus so that it spreads easily and becomes more of a dressing/sauce.)
